Exclusive Tasting: Just 12 Seats for an Authentic Czech Culinary Experience!

Ondra Slanina, the co-owner and executive chef of both Chateau St. Havel and Ginger & Fred, is introducing an exciting new culinary concept in the heart of Prague.
His most recent endeavor, the Vinobona Chef’s Table Restaurant & Wine, focuses on combining locally sourced ingredients, Czech culinary traditions, and a unique personal touch to deliver an exceptional fine dining experience.
The philosophy behind Slanina’s kitchen emphasizes the selection of ingredients that are either locally sourced or have strong connections to the rich history of Czech cuisine. This approach is evident in his new restaurant, where the tasting menu includes premium elements such as foie gras, truffles, snail caviar, and even edible gold.
All ingredients are meticulously procured in exacting quantities from small regional producers including Farma Havlíkův Dvůr, Šnečí farma Nahošovice, and Olejový mlýn Petráveč, which guarantees both freshness and minimal waste throughout the process.
The meat-centric tasting menu features dishes such as veal paired with pickled cucumber, foie gras served with cranberries and truffles, pike perch cooked in a saffron sauce, and a beef rib adorned with chestnuts and gold leaf.
For those preferring a plant-based option, the vegetarian menu showcases dishes like bryndza accompanied by buckwheat, creamed mushrooms enhanced with caviar, and cauliflower dressed with truffles and gold. To conclude the meal, dessert offerings include semolina served with honey and carob nuts, all prepared following traditional Czech methods.
Joining Slanina in this venture is Lucie Sládková, an expert in providing top-notch gastronomic service and caring for guests. Together, they have crafted an experience that not only highlights personal attention but also offers refined service, ensuring diners embark on a truly memorable culinary journey.
A thoughtfully selected wine list complements the menu, presenting a variety of esteemed international brands alongside exclusive Czech wines. Each wine is carefully selected to perfectly pair with the tasting menu and enhance the overall flavor experience.
Vinobona is situated in a historic building that was once a hub for Czech film production, which adds a dash of cinematic allure to the dining atmosphere. Close by is Prague’s last remaining half-timbered house, which emphasizes the unique charm of the location.
The Chef’s Table Restaurant & Wine operates by reservation only, featuring either a six-course or nine-course tasting menu. With a limited capacity of just 12 guests, the intimate atmosphere ensures personalized service for everyone dining there.
The restaurant is open to welcome guests from Tuesday through Friday, operating from 5:30 PM to 11:00 PM.
