Baking traditions in Bohemia begin on the first Sunday of Lent, known as “Black Sunday.” On this day, women traditionally put away colorful clothing as a sign of mourning. This is also when the dish “Pučálka,” made from sprouted and roasted peas, is prepared. Another custom revolves around “Fox” – on this night, mothers would secretly bake sweet pretzels, hanging them with colorful ribbons from the branches of fruit trees. When children awoke, they were told that the “fox” had eaten the pretzels from the garden, although this charming tradition is on the verge of being forgotten. The next baking event occurs on Ugly Wednesday, the last Wednesday before Easter.

On that day, a special yeasted pastry called “Judas” is made, which is spread with honey and butter and shaped like the coiled rope that Judas Iscariot was said to have hanged himself with. Judas is traditionally served for breakfast on Maundy Thursday. The baking peaks on White Saturday, where sweet pastries and lamb cakes are prepared, unless, of course, a roast lamb is already planned for the Easter meal—this sweet dish was meant to substitute for it in less affluent households.
